GREEK SALAD | A SIMPLE SALAD RECIPE

I love Greek Salad.  Even though, this may not be the most traditional, it is simple and delicious.  You can use a store bought dressing if you like, but the dressing I have included, is very easy.  Highlighting the tomatoes and cucumbers, the dressing is nice, light, and not overbearing.  I always place the feta cheese onto the salad, after I  have tossed it.  This way, you get the true taste of the feta cheese.

DIRECTIONS

THINGS YOU NEED

 2 Bags of mixed salad greens

1 cucumber,diced into small pieces

1 small can of sliced black olives

1 large tomato, diced

1 container of crumbled feta cheese

6 tbsp of red wine vinegar

1 tbsp of Italian seasoning

Olive oil

DIRECTIONS

Place salad greens into a bowl

Place diced cucumber and tomato into the bowl with the salad greens

Spread black olives over salad mixture

 4

In a mixing cup, add red wine vinegar and Italian seasoning

Whisk together

Drizzle olive oil into mixing cup while whisking, drizzle to taste

Pour dressing over salad mixture and toss well. 

Add feta over the top

Cranberry and Goat Cheese Salad

Easiest Salad To Make That Goes With Everything!

 

   This is one of the easiest salads you can make.  It goes with anything you are serving.  Great for outside grilling or even taking to a potluck.  The best part, it tastes great!


PREP TIME

THINGS YOU NEED

 1 bag of pre mixed salad of your choice 

1 container of crumbled goat cheese

2 cups of craisins

6 tbsp of red wine vinegar

1tbsp of dijon mustard

Olive oil

2 tbsp of honey

DIRECTIONS

Place salad mix into bowl

In a separate bowl, combine red wine vinegar, dijon mustard, and honey

Whisk together till well blended

Slowly drizzle olive oil while whisking to tste

Pour dressing over salad mix and toss till well blended

 4

Add crumbled goat cheese and craisins to top

Tomato Asparagus Flatbread With Ricotta Cheese

Tomato Asparagus Flatbread With Ricotta Cheese

This is the easiest recipe for flatbread.  Fresh asparagus, Roma Tomatoes, and ricotta cheese, what more could you ask for.  There is very little prep and cook time...your family will...LOVE IT!

Follow instructions on your flatbread

THINGS YOU NEED

1 package of your favorite flat bread, usually 2 in a package

6-8 stalks of asparagus

2 Roma tomatoes

32oz of ricotta cheese

2 tbsp of Italian seasoning

1 tbsp of minced garlic

Olive oil

salt

DIRECTIONS

Clean your asparagus.

Preheat oven to the temperature recommended on your flat bread package

In a bowl, combine ricotta and Italian seasoning till well blended

Lightly drizzle olive oil onto flat bread and spread evenly

Thinly slice Roma tomatoes

Dice asparagus into small pieces

In a bowl, combine asparagus and minced garlic

Lightly drizzle olive oil over asparagus

Lightly sprinkle salt over asparagus

Mix together till well blended

Spread ricotta cheese over flatbreads evenly

Place asparagus onto ricotta evenly

Place slices of Roma tomatoes onto ricotta evenly

Place in oven for the recommended time of your flat bread package

When finished, slightly drizzle olive oil over your flat breads

QUICK AND SIMPLE ITALIAN PASTA SALAD

An easy Italian Pasta Salad for any occassion

 This is one of my all time favorites.  Whether I am making it for my family, a potluck, or party...its seems to be a crowd pleaser.  You can serve it by itself for lunch or use it as a side dish.  Even though the ingredients state to chop your mozzarella, I use string cheese mozzarella.  It is the same thing, but it is easier to slice, which is a time savior.  Plus there is always extra for the kids as a snack.  I hope you like this recipe as much as we do...ENJOY! 


 QUICK AND SIMPLE ITALIAN PASTA SALAD 


 

PREP TIME 

15 min

COOK TIME 

10 min plus 10 minutes of cooling 

SERVES

4-6

THINGS YOU NEED

2 boxes of tri color rotini pasta

1 can of sliced black olives

1 green bell pepper, diced into small pieces

2 cups if chopped pepperoni

2 cups of chopped mozzarella

5 tbsp of red wine vinegar

2 tbsp of Italian seasoning

1 cup of shredded parmesan

Extra shredded parmesan (optional)

Olive oil


DIRECTIONS

Cook your pasta as directed

After straining, run cold water over pasta to cool

In a bowl, combine cooled pasta, green bell pepper, pepperoni, mozzarella, and black olives

In a small bowl add red wine vinegar and Italian seasoning. Whisk as you drizzle olive oil to taste

Pour over pasta mixture and mix well

Add shredded parmesan cheese and toss pasta

When ready to serve, shred additional parmesan on top (optional)

Deconstructed Strawberry Short Cake

Deconstructed Strawberry Short Cake

This is a quick and easy version of a classic, Strawberry Shortcake.  I deconstructed it for a couple reasons.  It makes it easier to create and I don't bake my own pound cake.  I go to my local baker and purchase lemon flavored pound cake.  It gives the dessert a different flavor.  It also off sets the sweetness of the strawberries and whip cream.  I even finish it off with lemon zest.  It looks as great as it tastes!


      

 

PREP TIME 

30 min, 

1/2 hour of refrigeration



SERVES

4-6

 

THINGS YOU NEED 

 

1 64 oz of fresh strawberries, cleaned, and sliced into quarters

1 lemon flavored pound cake thinly sliced

1 pint of heavy whipping cream

1 cup of granulated sugar (1/2 a cup for strawberries, 1/2 cup for whip cream)

2 tbsp of pure vanilla extract

1 lemon, grate lemon peel to make lemon zest (optional)


      

DIRECTIONS

In a bowl combine prepped strawberries and sugar. Mix till well blended

Cover and refrigerate for at least a 1/2 hour.

In a large bowl, combine heavy whipping cream, sugar, and vanilla

With a hand mixer, beat on high, till cream becomes thick (approximately 4 minutes)

Place a slice of pound cake on plate

Spoon a heaping amount of strawberries on top

Spoon whip cream on top of strawberries

Top with lemon zest
