Ceci's Classic Cole Slaw

Ceci's Classic Cole Slaw

This is an oldie but goody.  This Classic Cole Slaw Recipe is great with anything.  Grilled chicken or barbeque, this recipe goes with it!   

     

 

PREP TIME 

15 minutes



SERVES

4-6

 

THINGS YOU NEED

 

1 bag of pre-shredded cole slaw mix

1 cup of mayonnaise

3 tbsp of sugar

2 tbsp of pepper

2 tsp of salt

3 tbsp of milk

      

DIRECTIONS

 1

In a bowl, combine all the ingredients listed

Mix till well blended

SERVES

THINGS YOU NEED

 

1 dozen eggs

2 tbsp of milk

2 tsp of salt

2 tsp of pepper

1 red tomato, diced into small pieces

1 green bell pepper, diced into small pieces

2 cups of shredded Colby jack or pre-shredded Mexican blend without seasoning

Non-stick cooking spray

1 12 count muffin pan


      

DIRECTIONS

Pre-heat oven to 395

With non-stick cooking spray, spray onto muffin pan

 2

Combine eggs, milk, salt, and pepper into a bowl and scramble until blended evenly

 3

Place a few tomatoes and green peppers into each muffin cup

Sprinkle cheese into each muffin cup to taste

Pour egg mixture into each muffin cup till filled to the top

With a fork, mix each cup till ingredients are spread evenly

 4

Place in oven for 20 minutes or until tops starts to brown

Let cool for 5 min

Ceci's Tuna Pasta Salad

TUNA PASTA SALAD

This recipe is an elevated twist to macaroni salad.  Sometimes, I use a different pasta, but it always turns out great.  Not only can you make Tuna Pasta Salad to take to a potluck, I also use it for lunch, dinner, and as a side dish too!

SERVES

THINGS YOU NEED

 

1 box of penne pasta or any pasta of your choice

1 cup of mayonnaise

3 cans of white albacore tuna in water, 5oz (drained)

3 large celery stalks, cleaned and diced into small pieces

3 tbsp. of Mrs. Dash Original

3 tsp. of salt

2 tsp. of pepper


      

DIRECTIONS

 1

Cook pasta as directed , drain, and let cool

***you can run cold water over pasta in strainer, till cool, toss to remove excess water.

In a bowl combine mayonnaise, tuna, celery, Mrs. Dash, salt, and pepper

Add pasta to mixture and stir till well blended

 3

You can serve immediately or refrigerate

Ham and Cheese Wheels

HAM AND CHEESE WHEELS

     

 PREP TIME 

10 min


COOK TIME

12-17 min or until golden brown


SERVES

THINGS YOU NEED

 

1 8oz can of refrigerated crescent dough sheet

3 cups of diced cooked ham

2 cups of shredded Gouda Cheese

Or any cheese of your choice

1 large baking sheet

Parchment paper

      

DIRECTIONS

 1

Pre-heat oven to 350 degrees

Line baking sheet with parchment paper

Unroll crescent dough sheet onto flat surface

 3

While remaining flat, spread diced cooked ham over dough evenly

Sprinkle grated cheese over ham and dough sheet evenly

 4

Starting longways, roll dough containing ham and cheese

Pinch seem of dough to seal

Cut 3/4 inch slices to make wheels

Place onto baking sheet lined with parchment paper

 5

Bake for 12-17 minutes or until golden brown

Tortellini Alla Fini

TORTELLINI ALLA FINI

THINGS YOU NEED

 

2 8 oz containers of fresh cheese tortellini

2 cups of cooked peas

2 cups of diced cooked ham

1 pint of heavy whipping cream (heavy cream)

6 tbsp of butter

3 cups of shredded parmesan cheese

1 tsp of nutmeg

1 tsp of ground pepper

       

DIRECTIONS

Cook pasta as directed and drain

 2

Melt butter, over medium heat, in sauce pan

 3

After butter has melted, add cream, stirring frequently

Add nutmeg and pepper

 4

Slowly add parmesan cheese while continuing to stir

When sauce starts to thicken, add ham and peas

 5

In the same pot used to cook pasta, pour sauce over tortellini and toss

 6

Grate parmesan cheese over top when serving (optional)

Easy Macaroni and Cheese

EASY MAC-N-CHEESE

If you are looking for a main dish or side dish, this easy macaroni and cheese is the way to go!  My Easy Mac-n-Cheese recipe will melt in your mouth.  But, I have to warn you, this is no waist-watching recipe...but so worth it!

COOK TIME

30 min, plus an extra 10 min to cool


SERVES

8-10

 

THINGS YOU NEED

 

1 Large box of elbow macaroni, 32oz

5 tbsp. of butter

1/2 of an 8oz packet of cream cheese

2 1/2 cups of half-n-half

1 tsp. of ground mustard

8 cups of shredded Colby/Jack cheese or 4 bags of pre-shredded Mexican blend-without seasoning

2 cups of panko breadcrumbs (plain) for topping (optional)

6 tbsp. of melted butter for topping(optional)

1 9x13 glass casserole dish

Non-stick cooking spray


      

DIRECTIONS

 

1

Cook the elbow macaroni, as directed, then drain

Pre-heat oven to 395 degrees (oven temperatures and times may vary)

Spray casserole dish with non-stick cooking spray

Over medium heat, using the same pot you cooked your elbow macaroni in, melt butter add half-n-half and cream cheese

Continue stirring

As cream cheese starts to soften, add 7 cups of shredded cheese

Continue stirring

 4

Add ground mustard

Continue stirring till melted and well blended

 5

Take off heat

Add elbow macaroni to cheese mixture

Mix till well blended

Pour into casserole dish

Spread 1 cup of shredded cheese on the top evenly

Sprinkle panko bread crumbs over top evenly (optional)

Drizzle melted butter over panko breadcrumbs evenly (optional)

Bake in oven for 30 minutes or until cheese has melted or breadcrumbs start to brown

Let stand 10 minutes before serving

Sausage and Potato Casserole

This is a great dish for breakfast or dinner.  A combination of eggs, sausage, potato, and cheesy goodness!  It is one of my daughter's favorites.  Satisfying and fulfilling, you will come out saying...YUM!


          

Sausage and Potato Casserole

 PREP TIME

COOK TIME

35 minutes

SERVES

4-6

 THINGS YOU NEED 

 

2 packs of pre-cooked pork or beef sausage links., approx. 20-24 links

Defrosted and diced into small pieces

1 20oz bag of fresh shredded potatoes, hash browns

1 dozen eggs, large

3 cups of shredded Colby-jack cheese.

Can also use pre-shredded Mexican cheese blend without seasoning

5 tbsp of milk

Non-stick cooking spray

2 tsp of salt

2 tsp of pepper

9x13 casserole dish

Aluminum foil

      

DIRECTIONS

 

1

Pre-heat oven to 395 degrees

Spray casserole dish with non-stick cooking spry

 2

Place diced sausage and shredded potatoes into casserole dish

 3

In a bowl, whisk together eggs, milk, salt, and pepper.

Pour egg mixture over sausage and potatoes in casserole dish

 4

Take 1 cup of shredded cheese and pour into casserole dish.

Stir all ingredients in casserole dish till mixed together evenly

 5

Cover casserole dish with aluminum foil and place in oven for 30 minutes

 6

Remove aluminum foil and sprinkle 2 cups of shredded cheese on top evenly

Place back into oven till cheese has melted, approx. 7 minutes

 Remove from oven and allow to stand 5 minutes before cutting

Cut into squares
