Think about it...grocery shopping, cooking, dividing food, for one week! But, it does not have to be like that. Create 2 meals in 1 Recipe, is designed to take the hard work out. Breaking the meal plan into 2 meals..is so much easier to think about and conquer. You never have to think of what is for dinner tonight and it saves you from spending money. If we do not have anything planned for dinner, we usually get take-out, which costs money! Give this a try...it will save you time and many trips to the grocery store.
This Create 2 Meals In 1 Recipe, Roasted Chicken Breast/Chicken Salad, is comfort food made easy. Remember, you are treating your kitchen as a chef does in a restaurant. The majority of meal prepping is done from the first meal. Meal #1, Roasted Chicken Breast is tasty and easy to make. You can serve this with a side salad or any vegetable. I served this with Amazing Green Bean Casserole Without Baking, you will love it! To roast the chicken, I use a baking pan with a cooling rack. For meal #2, Chicken Salad, you do not need to use seasoning, as the seasoning cooked into the chicken from roasting it. All you need is a sprinkle of salt and pepper to taste. I served this on a club roll. But, you can eat it as a salad over a spring mix, or make it into a wrap. No matter how you serve it...it will taste fantastic. Now, let's get cooking!

8-10 Chicken breast (bone-in)
5 tbsp olive oil
5 tbsp Italian seasoning
3 tbsp of Rosemary
3 tbsp of Adobo seasoning
3 tbsp sea salt
2 tbsp of pepper
2 cups of mayonnaise
2 cups of chopped celery
PREP TIME
5 minutes
COOK TIME
45 minutes

INGREDIENTS
8-10 Chicken breast (bone-in)
5 tbsp olive oil

DIRECTIONS

Preheat oven to 395 degrees. Lay your chicken out on your baking sheet with cooling rack

In a mixing bowl combine Olive Oil, Italian Seasoning, Rosemary, Adobo Seasoning, Salt, and Pepper

Spoon mixture over chicken breast. Massage the mixture onto each chicken breast

Place in oven for 45 minutes, or until chicken reaches a golden brown

Serve with favorite side dish

Remaining Roasted Chicken Breast
2 cups of mayonnaise
2 cups of chopped celery
Salt and pepper to taste
DIRECTIONS

Dice chicken into small pieces and place in a mixing bowl

Add celery, mayonnaise, salt, and pepper to mixing bowl
Mix well

Serve by itself, in a sandwich, or a wrap
