HOW TO EAT A STEAMED CRAB

  Ever wondered how to eat a steamed blue crab?  Being from Maryland...summertime means picking crabs.  Everyone usually has their own style...but I am going to show you mine...the Maryland way.



 

There are very few things you need.  

1.  Newspaper to be placed on the table...picking crabs can get messy!

2. A knife to help you get the meat out.

3. A mallet in case you have a problem breaking open the claws...but not used to beat the crab!

4. Paper towels...like I said before...pickin crabs can be messy!

5.  The most important...STEAMED CRABS!

Items you need

  Now, pick a crab, and introduce yourself!

 The first thing you want to do is take the legs and claws off.  Pull back the opposite way they are bent.  At each knuckle, you can bend them the opposite way of their natural bend.  Each leg has crab meat in them.

  You repeat this process with the claws too.  You may need to use your mallet at the corner of the claw.  Sometimes, this helps get the claw meat out.

 Flip the crab over, belly side up.  you will see a point or triangle.  This tells you if the crab is male or female.  However, I call it the special lever.  Pull up on this point and pull the crab apart.

 Now, this is where it gets messy!  You want to clear off anything that does not look appetizing...especially the lungs...CLEAN OFF COMPLETELY!  The lungs are on each side of the crab with a sponge- like texture.

  But I have to tell you...a true Marylander or an experienced crab eater...will eat the crabs "fat" or "mustard".

 Now this is what I like to call the "Crab Dance"...you are going to break the crab in half.

 Then take your knife, and split each half down the middle.

 And now...you pick the crab meat out and ENJOY!

Ceci's Crab Cakes

Crab Cakes

This is one of my favorite foods.  But, what do you expect, I am from Maryland.  I think everyone has there own way of making crab cakes.  I even have a different version as well.  But, this one hold true to my heart... Baltimore style ...that you will fall in love with.


      

 

PREP TIME 

10 min 

1 hour of refrigeration


COOK TIME

15 min


SERVES

4-6

 

THINGS YOU NEED

 

1 16 oz container of fresh lump crab meat

1/2 cup of mayonnaise

1/2 cup plain bread crumbs

1 tbsp of Old Bay

1 tsp of Worcestire sauce

1 tbsp of Dijon

1 egg, beaten

3 tbsp of canola oil


      

DIRECTIONS

 1

Beat egg until smooth. Add mayonnaise and mix together.

Place crab meat in a bowl. Add worectire sauce, Old Bay, dijon, and bread crumbs. Pour egg mixture over crab meat. Gently toss till ingredients are mixed well

Cover and refrigerate for at least 1 hour

Gently form crab mixture into thick patties

Heat canola oil over medium heat

Place patties into pan, flip after approximately 4 minutes, or until brown, 

repeat for other side

Molly's Crab Melt-a-ways

Molly's Crab Melt-A-Ways

I can't take credit for this recipe...but it is one of my favorites.  This is a recipe from one of my closest friends.  Her mother, Molly, was an inspiration to so many.  She also made these as a snack for us when we were young.  Not only are they great as a snack...they are an easy appetizer too.  You can make a batch, freeze them, and cook them when you want.  They last up to 2 months in the freezer.


     

 

PREP TIME 

15 min, but freeze time is 1 hour


COOK TIME

Broil for 5 min


SERVES

6-8

 

THINGS YOU NEED

 

1 package of English Muffins, cut in half and spit open

1 8 oz of fresh crab meat

1/2 cup of softened butter

1 5 oz of Old English Cheese Spread

2 tbsp of mayonnaise

1 tsp of garlic salt

1 tsp of Worcestire sauce

1 tsp of seasoning salt


      

DIRECTIONS

In a bowl, mix all of the above ingredients together

Spread mixture onto cut English Muffins evenly

 3

Place onto a baking sheet or tray, freeze for 1 hour

 4

Pre-heat oven to broil

 5

Broil for 5 minutes or until tops turn golden

 6

Let stand for 5 minutes
