This Create 2 Meals In 1 Recipe, Grilled Chicken Caesar Salad/Chicken Quesadilla, is simple to make without lacking flavor. In addition to salt and pepper, I use Adobo Seasoning on the chicken. It gives great flavor without the time of marinating.
You can use your outside grill or an indoor grill. The one I recommend is the PowerXL Smokeless Grill. It works great and is a griddle too!

THINGS YOU NEED
2 packs of chicken tenderloins
approx. 6-8 in each pack
Adobo Seasoning
Salt & Pepper
3 stalks of Romaine Lettuce, chopped
Caesar Dressing, your favorite
Shredded Parmesan Cheese
Croutons, homemade or your favorite
Soft Tortillas
Tomatoes, diced
Sliced Black Olives
4 cups of Shredded Mexican Cheese Blend
Sour Cream, optional

INGREDIENTS
2 packs of chicken tenders
Romaine Lettuce, chopped
Favorite Caesar Dressing
Shredded Parmesan Cheese
Favorite Croutons
Adobo Seasoning
Salt & Pepper
DIRECTIONS

Sprinkle chicken with Salt, Pepper, and Adobo Seasoning to taste.
Proceed to grill chicken
When finished, let chicken cool for minutes. Slice chicken into small pieces.
Save half of the chicken for Chicken Quesadilla

Chop Romaine Lettuce. Place half in a bowl for this recipe. Place other half in refrigerator for Chicken Quesadilla

Drizzle Caesar Dressing over Romaine Lettuce
Sprinkle Shredded Parmesan Cheese over mixture
Toss mixture till well blended

Place salad mixture onto plate.
Sprinkle additional Parmesan Cheese on top if desired
Add croutons and sliced chicken.
INGREDIENTS
Sliced grilled chicken
Chopped Romaine Lettuce
Shredded Mexican Blend Cheese
Diced Tomatoes
Sliced Black Olives
Soft Flour Tortillas
Sour Cream, optional
DIRECTIONS

Heat griddle on medium heat. If you do not have a griddle, you can use a Saute or Frying Pan

Place 2 tortillas on griddle
Sprinkle cheese onto each side
Place a few pieces of sliced chicken on one side

When cheese has melted and tortillas turn slightly brown on heated side, take off heat, and place onto plate

Layer Romaine Lettuce, Diced tomatoes, sliced black olives onto chicken side of tortilla
Spoon sour create onto top
Cover with remaining tortilla and cut as desired.
