This easy lasagna recipe is one of our family favorites. Using 7 different cheeses, including cottage cheese, makes it so cheesy! Adding a meat sauce to it, makes it divine. There are many short cuts, making it taste like a traditional lasagna recipe, but without all the time in the kitchen. This EASY LASAGNA RECIPE WITH 7 CHEESES & MEAT SAUCE is awesome! There are many shortcuts I have taken, and many more that you can take too. In a traditional lasagna recipe, you would cook onions and garlic, then add it to the sauce, and simmer for an hour. Instead, I add chopped garlic and minced onion to the sauce. It still gives you the flavor you are trying to achieve. The lasagna noodles would be boiled and then separated. But, in this easy lasagna recipe, we do not do that. I just mix the sauce, without simmering it. Think about it, it will still cook in the oven. For the lasagna noodles, I use oven baked noodles. You just place them within the lasagna. They cook while in the oven. In this recipe, I do create a sauce from scratch, but you can use your favorite spaghetti sauce, and it will turn out just fine. Just make sure you use 2 jars of sauce. To make this easy lasagna recipe even faster, turn it into a meatless lasagna. Instead of adding the meat layer, just stick with the 7 cheese mixture. It comes out amazing! For the meat sauce, I like to use use a meatloaf/meatball mix. But, you can use ground beef or even ground turkey. It still comes our tasty!

THINGS YOU NEED
3 15oz cans of tomato sauce
2 14.5oz cans of petite diced tomatoes
1 12oz can of tomato paste
5 tbsp of Italian seasoning
6 tbsp of minced onion
3 tbsp of Adobo Seasoning
1 tbsp of granulated sugar
1 tbsp of olive oil
3 tbsp of chopped garlic
1 24oz container of cottage cheese
1 32oz container of ricotta cheese
2 bags of pre shredded 5 cheese Italian Cheese Mix
2 boxes of oven ready lasagna noodles
2 lbs of meatloaf/meatball mixture
1 egg, beaten till completely yellow
Preheat oven to 400 degrees
In a bowl, mix the tomato sauce, petite diced tomatoes, tomato paste, 3 tbsp of Italian Seasoning, chopped garlic, minced onion, Adobo Seasoning, olive oil, sugar, . Make sure you mix well.
In a separate bowl, place the ricotta cheese and pour the egg mixture, mix well.
In the same bowl, add cottage cheese, 2 tbsp of Italian Seasoning, and blend all ingredients.
Place meatloaf/meatloaf mixture in a pan over medium heat. Add 3 tbsp of Adobo Seasoning, sprinkle salt & pepper to taste. Cook till brown, then drain. Place the meat mixture back into your pan, but do not place back onto heat. Sit to the side.
Spoon in sauce mixture into meat mixture until meat is covered, but not saucy.
In your casserole dish, spoon a thin layer of sauce onto the bottom
Place a layer of noodles, overlapping, onto sauce.
Spoon half of the cheese mixture onto noodles, and spread evenly
Place another layer of noodles, overlapping, onto cheese mixture
Spoon all of your meat mixture onto noodle layer. Spread evenly.
Place another layer of noodles, overlapping, over meat mixture
Spoon the rest of your cheese mixture on top of the layer of noodles. Spread evenly!
Place another layer of noodles, overlapping, onto cheese mixture.
Spoon sauce mixture over top the layer of noodles till covered evenly.
Cover with aluminum foil and place in the oven for 35 minutes
Remove your casserole dish out of the oven and take the aluminum foil off.
Sprinkle Italian cheese mix over the top...you should use all, till there is an even layer.
Place back into oven, until cheese starts to brown. Approximately 10 minutes, but all oven vary.
Take out oven and let cool for 15 minutes.
